Rice Courgettes/Zucchini

Ingredients:
-250g(8.82 oz) rice
-1 liter of broth (1 liter of water + 2 Knorr stock cubes)
-6 courgettes/Zucchini
-1 onion + 1 garlic clove
-Parmesan
-30g(1.06 oz) butter
-salt and pepper.

Preparation:
1) Wash and cut the courgettes into rounds or cubes.
2) Start warming the broth in a pot.
3) Fry the previously chopped onion and garlic in a saucepan.
4) When the onion and garlic start to get brown, add all the courgettes.
5) Mix everything and cover with the lid. Every 2/3 minutes mix and cover with the lid.
6) After about 10/15 minutes, when the courgettes will already be practically cooked, add salt and pepper. Wait a few more minutes.
7) When the courgettes are completely cooked (18/20 minutes) add the already hot stock (the 2 stock cubes must have already been dissolved in the water).
8) Add the rice and mix everything, towards the end of cooking, mix more often so that everything does not stick to the saucepan.
9) Once the rice is cooked, add the Parmesan cheese and butter. Mix everything together, leave it for another minute and then turn it off.
I suggest to left to cool for 2 minutes.
