Sponge Cake
Ingredients:
-5 eggs at room temperature (very important)
-150g (5.29 oz) of sugar
-1 vanilla bean/one vanilla pod
-1 pinch of salt
-75g (2.80 oz) of potato starch
-75g (2.80 oz) of flour

Preparation:
1) Open the vanilla pod with a knife and with the back of the blade remove the seeds and put them in the planetary mixer, add a pinch of salt, the 5 eggs and mix for 15 minutes at medium speed and pour the sugar a bit at a time.
2) In the planetary mixer, 15 minutes after the cream is frothy, add the flour, sieving them. Mix from bottom to top slowly. Pour into the 24cm cake tin. Level with a spatula.
3) Grease and flour the mold.
4) Place in the oven in static mode at 170°C for 50 minutes. Finally do the toothpick test, every oven cooks differently.
5) Let it cool completely.
