Vegetable Sauce

Vegetable Sauce
Ingredients:
-4 onions
-1 Red pepper
-1 large aubergine or 2 small ones
-5 zucchini
-6 tomatoes
-1 glass of white wine
-1 tablespoon tomato paste
-salt and pepper

Preparation:
1) Wash and cut all the vegetables into cubes, keeping them separate by type.
2) In a very large non-stick pan, fry first the onions and after they are browned a bit, add the aubergine cubes and the red pepper cubes. Cook for 10 minutes and stir occasionally.
3) Add the courgettes and tomatoes to the pan. Mix.
4) In a large wine glass, add 1 tablespoon of tomato paste and mix. 
5) Add the wine in small quantities bit by bit to the sauce  and mix.
6) Add salt and pepper and cook for 1 hour on low heat.

It's tastier if you put to cook after the onion the ham cut in slices...but no longer vegetarian :-)
