Tart with Apricot Jam

Ingredients:
-300g(10.58 oz) of flour
-170g(6.0 oz) of butter
-150g(5.29 oz) of sugar
-1 pinch of salt
-3 yolks + 1 yolk to cover the strips
-vanilla-free
-1 jar of apricot jam
Preparation:
1) Blend with multi-one Kenwood until everything becomes homogeneous: the sugar, the 3 yolks and the butter, then add the flour a little at a time.(A)

2) Make a bale, cover it with plastic film and put it in the fridge to rest for 40 minutes.(B)

3) The ball is taken out of the fridge and separated, a quarter of the dough is removed for made a strips for decoration.
4) The greater part of the dough is rolled out and placed in the round glass baking dish. In the stretched dough, make small holes with a fork so that it does not swell. It lays out all the jam.(C)

5) With the dough set aside, make strips which are then placed delicately on the cake.(D)
6) Turn the strips out with the yolk.
7) Bake for 25 minutes at 170°C (338°F). Leave to cool for a while before serving.
It should be accompanied by a good sparkling wine
