Potatoes Gnocchi with Meat Sauce
Ingredients for the mixed meat ragu:
-Mix to fry: -2 onions, 2 stalks of celery and 2 carrots
-1200g(42.33 oz) mixed meat
-600g(21.16 oz) tomato pastes
-400g(14.11 oz) Mutti tomato pulp
-salt and pepper
-1 glass of wine (or milk)
Ingredients for Potato Gnocchi:
-1 kg of potatoes
-300g Flour
-1 egg
-Salt
Preparation:
1) Boil the potatoes in water with 2 tablespoons of salt for 40 minutes. It is important that the water completely cover the surface of the potatoes.
2) In the meantime, make the ragù. Brown the onion, celery and the chopped carrots in a saucepan without lid.
When the sauté is golden (10 minutes), add the mixed meat, mix, put the lid on and cook over medium heat. Stirring occasionally. After 1 hour and half of cooking , add the tomato puree and tomato pulp, salt and pepper. Cook for 2 hours, stirring occasionally and adding wine (or milk) when the sauce becomes a bit dry.
3) Let the boiled potatoes cool, put them in the potato masher, add the egg, flour and salt and mix everything with a fork. Finally make a ball.
4) From our ball we pull the dough away a little at a time to form round strips, cut that into small pieces. These small pieces will be passed with the thumb on the back of the grater. It is important to put the flour over everything before doing this operation: flour on work surface, on grater, on knife and on the thumb :-). Place your Potatoes Gnocchi on a paper, covered with flour and let rest 1 hour before cooking.
5) In a deep saucepan filled with water (+ 2 tablespoons of salt) put your gnocchi one at a time in the boiling water and let them cook for 3 minutes. Put the Potatoes Gnocchi in a bowl where you also add the ready ragù. I advise you, first to put a little ragù then put the gnocchi drained well with a skimmer.
Add Parmesan cheese to your dish with potato gnocchi. You worked hard but the result is simply amazing! BUON APPETITO!!
