Spaghetti alla Carbonara

Ingredients for 4 people:
-500g(17.63 oz) Spaghetti
-4 yolks + 1 egg
-150g(5.29 oz) Smoked bacon cubes/guanciale
-150g(5.29 oz) Pecorino Romano/Parmesan cheese
-4 tablespoons of cooking water or milk
-salt and pepper
Preparation:
1) Bring 2 liters of water to the boil.
2) In a pan cook the cubes of smoked bacon in a pan for about 5 minutes, until they are cooked. Drain the excess fat and leave to cool.

3) Put the yolks and the egg in a baking dish, add the Pecorino Romano or Parmesan cheese, the cooking water or milk, the salt and the pepper. Mix everything. Add the already cooked bacon smoked. Mix.

4) Cook the spaghetti by first adding the salt to the pot. When spaghetti are cooked, drain it, leave it to cool for 1 minute and then add it to the carbonara sauce.
In many parts of Italy Pecorino Romano is used instead of Parmesan cheese, it’s decidedly tastier!!
