Polpettone
Ingredients:
-450g(15.87 oz) of beef
-150g(5.29 oz) of pork
-1 egg
-4 tablespoons of Parmesan cheese
-4 spoons of bread crumbs
-salt and pepper
Preparation:
1) Put the ground beef and the ground pork in the mixer. Let it mix slowly.
2) Add the egg, the breadcrumbs, the Parmesan, the milk, the salt and the pepper to the mixer one at a time.
3) Mix everything for a few minutes until everything becomes homogeneous.
4) Make a meatloaf wrapped in a aluminum foil.
5) Insert the meatloaf wrapped with aluminum foil into the ready-made broth (see my broth recipe).
6) After a few minutes of cooking, extract the aluminum foil with pliers. Immerse completely the meatloaf and boil it for 1 hour and a half with the lid slightly moved, to let the steam out. Turn the meatloaf once in a while, it tends to come flat and if you don’t turn it over risk to forming a crust on the top.
7) Remove from the broth and cut into slices.
Meatloaf/polpettone, usually accompanied by cooked vegetables from the broth.
