Homemade Cherry Jam
Ingredients: -2 Kg(70.55 oz) of cherries -2 kg(70.55 oz) of sugar -1 vanilla pod -2 glasses of water -Juice of 1 lemon Preparation: 1) Wash all the cherries and remove the seed. 2) Wash the glass jars you plan to use. I wash the jars in the dishwasher, so I'm sure they sterilize well. I usually use jars that I already have in the cellar. 3) Make a lemonade: in a glass with water, put the juice of 1 lemon and 1 spoonful of sugar. 4) In a large saucepan, bring the lemonade, cherries, sugar and 2 more glasses of water to a simmer over low heat. 5) After 1 hour add the vanilla bean cut lengthwise and pulling out all the seeds and mix them with the jam. 6) Boil the jam for 3 hours, stirring occasionally.
7) When the marmalade has reached the consistency a liquid honey, it means it’s time to put it in jars.
8) Put a metal knife under the jar. Put the jam into the jar, which is still boiling over a very low heat. Make sure there are no air bubbles left in the jar. Close the lid and wrap the jar with a cloth inside a bowl. Let the jam cool for 24 hours before moving it to the cellar.
