Tenerina

Tenerina
Tenerina is a typical dessert of Ferrara (Emilia Romangna).

Ingredients for a rectangular pan:
-640g Dark chocolate
-260g sugar
-260g butter
-6 eggs
-6 tablespoons of flour
-1 pinch of salt
-1 sachet of baking powder
-powdered sugar of vanilla

Preparation:

1) Heat the butter and chocolate in "Bagno Maria"(Water bath). Wait for everything to melt and mix until everything is homogeneous. Remove the pan with the butter and chocolate from the heat and leave to cool.
2) In a bowl, whisk the egg whites with a pinch of salt and set aside.
3) In another bowl mix the yolks with the sugar.

4) When the butter and chocolate mixture has cooled, add the flour, baking powder and lastly the whipped egg whites. Mix gently.
5) Grease and oil the bowl where you will place the dough. Put the dough into the Tenerina and cook it for 25 minutes at 180°C. 
When the Tenerina is already cooked, it is left to cool and then sprinkled with powdered sugar of vanilla.
If you like, you can accompany it with whipped cream.
