Vegetable Meatballs with Courgettes
Ingredients for about 20 courgettes:
-3 medium courgettes
-2 eggs
-1 cup of parmesan
-1 cup of breadcrumbs gluten free
-salt,
-oil for frying

Preparation:
1) Wash the courgettes and cut them into julienne strips with a cheese grater or with the mixer. Put them in a bowl and add the salt. If you want crunchy meatballs, squeeze the courgettes.
2) Put the courgettes into a bowl, add the eggs, parmesan and breadcrumbs. Mix everything gently with a fork.

3) Form balls with the dough and then crush them, place them on a plate.
4) Put a drizzle of oil in a pan and then add the courgettes, fry them on both sides, cooking them over medium/low heat with the lid on.
5) Once fried, place the courgettes in a dish cover with the scotex, so the oil will be absorbed.
They can be served both hot and cold.
