Margarita Bars

Ingredients for the base:

-150g(5.29 oz) of salted crackers

-150g of melted butter

-1 tablespoons of sugar

Ingredients for the filling, in 1 bowl :

-5 yolks

-400g(14.11 oz) of condensed milk

Ingredients for the filling, in 2 bowl :

-3 limes

-3 tablespoons of tequila

-2 tablespoons of rum

-1 pinch of fine salt

-1 pinch of extrafine salt

Preparation:
1) Let's prepare the base first. Blend the salty crackers with 1 tablespoon of sugar in a blender. Once the crackers are completely crumbled, add the melted butter. Blend again until everything is blended.
2) Put the mixture in a rectangular or square baking tray. Level the surface with the back of a spoon. Put in the fridge for 15 minutes.

3) Take the baking tray out of the fridge and place it in the oven at 175°C for 18 minutes, then take it out of the oven and let it cool.

4) Let’s prepare the filling. In a bowl, put the lime juice, lime zest, tequila, rum and salt. We mix everything.

5) In another bowl we put the egg yolks and the condensed milk. We mix everything.

6) In the bowl with the condensed milk and the egg yolks, add the mixture of the bowl with tequila and rum, adding a little at a time and mixing everything until it becomes a homogeneous mixture.

7) In the oven pan with the already cooled base, add the filling and bake at 175°C for 20 minutes.

8) Remove from the oven and leave to cool. When it has cooled, cut the cooked bars into rectangles and keep them in the fridge. Serve them fresh, as appetizers or desserts.
To give a slightly more delicate/salty flavour, sprinkle extra fine salt on top.
