Heart eggs with green beans
- Ingredients:
- -500g(17.63 oz) of fresh green beans
- -7 eggs -1 sausage
- -40g(1.41 oz) of Parmesan
- – balsamic vinegar
- -Ketchup
- -salt and pepper
Preparation:
1) Clean and wash the green beans, then put them in boiling water, add salt and boil them for 30 minutes. Once cooked, drain them in a colander and leave them to cool.
2) In a saucepan, put aluminum foil on the bottom and then add a little water that reaches halfway through the moulds.
3) Put the muffin molds heart-shaped in the water, the water must reach halfway through the molds.
4) Fill each muffin mold with 1 egg, salt, pepper, 1 sausage cut into small pieces and grated Parmesan.
5) Put a transparent lid on the pan and cook everything over a very low heat for 4 or 5 minutes.
6) Cut the green beans into small pieces.
7) Once the eggs are cooked, with the tip of a knife try to detach the eggs from the muffin molds and then turn them upside down on the plate.
8) Add some ketchup dots on the eggs.
9) Add the green beans to the dish and sprinkle balsamic vinegar and extra virgin olive oil on top.
