This is one of the recipe from my childhood, it was part of my childhood breakfast. It’s simply a kind of homemade plum cake. I remember that my mother prepared it in the evening, and obviously greedy as I was, I couldn’t wait for breakfast… I tasted it straight away, but I must confess that eaten in the morning it was much, much better (perhaps because I was hungrier 🙂 in the morning.

The quantities I will show you are for what you see in the photos, i.e. you can halve the quantities!

Ingredients:

-600g(21.16 oz) of sugar

-6 eggs

-300g(10.58 oz) virgin oil

-300g(10.58 oz) of milk

-2 sachets of vanilla yeast

-900g(31.74 oz) of flour

-rum (optional)

-25g of bitter cocoa powder

– powdered vanilla sugar

Preparation:

1) First, divide the yolks from the whites (being very careful not to break the yolk).

2) In a bowl, with a blender, whip the egg whites with a pinch of salt until stiff.

4) In the bowl with the yolks add the oil and milk, at the end add the flour gradually.

5) In the bowl with the yolks, add the whipped egg white and mix lightly with a spatula with a slow movement from bottom to top. You will get a very frothy cream! 6) Place some almonds in a blender and chop them.

7) From the soft mixture obtained, set aside about a quarter of the quantity and mix it in another container with the cocoa. Mix well until the mixture becomes chocolate coloured. 8) Using different molds, use your imagination to compose the filling of the pans, it is important to remember not to cover them more than half because everything still needs to rise in the oven.

8) Bake everything in the oven at 180°c for 40 minutes. Do the toothpick test at the end 🙂

Finally sprinkle everything with powdered vanilla sugar!
