Stuffed courgettes cooked in a pan

Ingredients:

-4 large courgettes

-1 egg

– 1 cup of ready-made ragù

-1 Cup of tomato puree

-half a glass of parmiggiano reggiano

-half a glass of breadcrumbs

-salt and pepper

-1 drizzle of oil for frying

Preparation:

1) Wash and cut the courgettes into logs of the same length as possible.

2) Using a tool or knife, remove the middle of the courgettes.

3) In the mixer place the ragù, the courgettes (one part), the parmiggiano reggiano, the egg and the breadcrumbs in the mixer.

4) Fill the hollow courgette pieces with the mixture obtained and fry them in a pan with a drizzle of oil.

5) Add the remaining filling to the pan around the courgettes, add the wine, put the lids on and cook everything over a low heat.

6) Turn the courgettes gently, add the salt and pepper.

7) Add the tomato puree and cook for another 2 minutes.

They are not very beautiful to look at, but I can assure you that the flavor is fantastic.

If you don’t have ragù, or for vegetarians, you can add pesto or other ready-made condiment.
