Soft apple biscuits
These biscuits are extremely easy to make and delicious. Good to eat for breakfast, or even as a snack (at school for kids). You know, we also want to talk about how genuine they are!!
Ingredients (for 20 biscuits):
-3 medium apples
-2 eggs
-100g(3.52 oz) of sugar
-100g(3.52 oz) of butter at room temperature
-350g(12.35 oz) of flour
-1 sachet of vanilla baking powder
– essence of rum or vanilla
– powdered sugar
-cinnamon powder
Preparation:
1) Wash the apples, remove the core and peel them. Cut them into thin, small pieces.
2) Separate the white from the egg yolk. The white of the eggs should be whipped until stiff and then put the apple slices on top.
3) With a blender mix the egg yolks with the sugar and the soft butter for a while until everything becomes smooth.
4) Mix everything together with a spoon.
5) Place the flour in a bowl, add the baking powder and mix.
6) In the bowl with the apple mix, add the vanilla essence or rum and then add the flour a little at a time and mix.
7) Place some flour on a plate, touch the palms of your hands inside :-). Take some of the mixture with a spoon, place them in your floured palm and make small balls and then flatten them lightly.
8) Place the baking paper on a baking tray and place the 20 raw biscuits on top, spaced apart as they still have to rise.
9) Bake at 170°C(338°F) for 20 minutes.
10) Once cooked, take them out and let them cool. Once cool, sprinkle some vanilla sugar and cinnamon powder on top.
Buon Appetito!!
