Truffle roses

It’s my daughter’s favorite dish :-). In a way it’s a shame that you can’t smell the truffle… it’s delicious! We know that the Truffle is a prized tuber, but unlike potatoes, it smells fantastic. We find it in the white truffle version (the most prized and precious) and the black truffle.

Ingredients:

-truffle

-480g(15.95 oz) of flour

-5 eggs

-400g(14.11 oz) of cooked ham

-50g(1.76 oz) parmiggiano reggiano

-250g(8.82 oz) of latose-free cream

-butter to grease the pan

Preparation:

1) Place the flour and eggs in a bowl. Initially mix with a fork and when it has become a little thick, mix with your hands. The density of the dough varies depending on the size of the eggs. If the final dough is too thick, add a little water, if it is too soft, add a little flour.

2) On a work surface, roll out the dough with a rolling pin. Let it rest for a few minutes. Unlike other pastries, this pastry must be denser and drier.

3) With the help of a rolling pin and a pizza cutter, cut strips from approximately 4 squares (bear in mind that they will then be cut in half, which will then be the height of the rosette).

4) Bring the water and a pinch of salt to the boil, then brush the strips of pasta with this.

3) Spread the cream on the pastry.

4) Spread the cooked ham over the cream.

5) Spread more bread over the cooked ham. Cover with grated cheese and then with truffle flakes (or truffle butter). I grated the truffle with the grater supplied with nutmeg walnut :-).

6) At this point everything is there. Cut the strips in half lengthwise, this will be the height of the rose.

7) Cover the pan with butter. Begin rolling up the strips, then place them on a baking tray.
Cover the roses with cheese, butter and truffle.

8) Cover the pan with the roses with foil; in this way they practically steam.

9) Place the pan in the oven at 200°C(392°F) for 30 minutes, after which, remove the foil and cook for another 10 minutes so that it forms a crust on top.

When the roses are browned, you can serve. The scent of truffles will dominate the room!!

I recommends accompanying them with a good white wine!
