Fish soup
Ingredients:
-1000g (35.27 oz) of cuttlefish
-500g(17.63 oz) of peeled prawns
-500g(17.63 oz) octopus already cooked (if the octopus is fresh, cook it aside for about 1 hour)
-1000g (35.27 oz) mix of clams, mussels and cockles
-500g(17.63 oz) of monkfish
-3 cloves of garlic
– parsley
– extra virgin olive oil
-1000g (35.27 oz) of already fish broth.
– 2 tablespoons of triple tomato concentrate
-some slices of toasted bread
-1 glass of white wine
Preparation:
1) First make the fish broth if you don’t already have it.
2) Clean all the fish available.
3) First of all, after having cleaned them well, fry the clams, mussels and cockles with a drizzle of extra virgin olive oil and 2 peeled cloves of garlic. Place the lid on and cook for 3/4 minutes until the shells have opened almost completely, add the parsley cut into small pieces and cook for another 2 minutes. Remove the shells and place them in a bowl, then when they have cooled, separate the mussels from the shells (leave some with the shell for beauty). Set them aside because they will be the last to be added to the soup. Keep the cooking liquid aside because it will later be added together with the fish broth.
4) Cut the cuttlefish into strips and then cook it in a large soup pot with a drizzle of extra virgin olive oil and a clove of peeled garlic. When the cuttlefish have shrunk, after about 10 minutes, add 1 glass of white wine and let it evaporate for about 3 minutes. Remove the garlic.
5) At this point add the fish broth, and the tomato sauce and the clam sauce, put the lid on and cook for 20 minutes.
6) Into the pan add the monkfish (which will have previously been removed from the central bone and the pulp cut into large pieces), add the already cooked octopus and cook for another 10 minutes.
7) Add the prawns and cook for another 5 minutes.
8) Add the shellfish and cook for another 2 minutes. Your fish soup is ready!
9) Place 2 slices of toasted bread on the bottom of your plate and then add your fish soup.
Fish soup should be served with red wine!
