An aubergine and two courgettes cooked in the air fryer
Cooking vegetables in the air fryer is the easiest and fastest way to cook vegetables and they come out very tasty because they are cooked and look like they were grilled. All this happens in just twenty minutes!
Ingredients:
-1 aubergine
-2 courgettes
-salt, pepper and herbs
-oil spray
Preparation:
1) Wash and cut the aubergine into slices. Sprinkle fine salt over both sides of each aubergine slice and leave to rest for 10 minutes.
2) Wash the courgettes, cut the ends and then cut them lengthwise into strips (it is better not to cut the courgettes into slices as this will dry them out much more). Season with a sprig of oil, salt, pepper and herbs.
3) Wash the aubergine slices from the salt, dry them with a scotex. Cut the aubergine slices into cubes and then drizzle with oil and add salt, pepper and herbs.
4) Place the aubergine cubes in the lower part of the air fryer, then place the grill and place the courgette strips on top.
5) Close the air fryer and cook for 10 minutes, then mix and cook for another 10 minutes always at 200°C (392° F). Your vegetables can be served.
Usually to flavor the vegetables even more I spray some balsamic vinegar from Modena on them.
