Spaghetti with seafood
Spaghetti allo scoglio is one of my favorite dishes with fish. Challenging in terms of time but the final result is amazing.
Ingredients:
-400g(14.11 oz) of spaghetti
-1000g(35.27 oz) of a mix of cockles and mussels
-400g(14.11 oz) of calamari
-200g(7.05 oz) of shrimp
-300g(10.58 oz) of cherry tomatoes
-Extra virgin olive oil
-2 cloves of garlic
-parsley
Preparation:
1) Wash all the fish. Place the shells with clams and cockles in a bowl with salted water and let them rest. 2) Clean the squid by cutting the skin, the internal bone, the entrails and cut the tuft, remove the mouth and eyes.
3) Cut the squid into slices and the tuft into small pieces and keep them separate because they have different cooking times.
4) In a pan, put a drizzle of extra virgin olive oil and a clove of garlic and a sprig of parsley. First add the cockles, then the venison and lastly the mussels. Cover with the lid and cook for a few minutes, until all the shells have hatched.
5) Using a slotted spoon, remove all the shellfish, filter the sauce remaining in the pan and set aside.
7) In a large pan, boil water for the spaghetti.
8) Place a drizzle of extra virgin olive oil in a pan and cook the squid cut into slices for 3 minutes, after which move them to a plate. In the same pan, add a drizzle of extra virgin olive oil and cook the squid cubes for 5/6 minutes. Once cooked, add them to the dish with the rest of the squid.
9) Cut the cherry tomatoes into small pieces.
10) In a large pan, put a drizzle of extra virgin olive oil and a clove of garlic, add the chopped cherry tomatoes and cook. After a few minutes, after the sauce from the cherry tomatoes has evaporated, add the filtered liquid from the shellfish and cook for a little longer. Add the prawns to the pan and cook them.
11) When the water in the pot boils, add the salt and then the spaghetti. Remove the spaghetti from cooking 4/5 minutes before final cooking and then add them to the pan with the prawns and cherry tomatoes.
12) Add all the previously cooked fish to the spaghetti, heat for 2 minutes, mix and then turn off. Serve with a good fresh white wine!
