Crostoli…Frappe… Sfrappole…Chiacchere

Depending on the area where you go in Italy, they change names: corstoli, frape, sfrapole, chiacchere and are the typical fried desserts for carnival. They are delicious and easy to make and without yeast, it just takes patience! Today I propose the basic recipe for these wonderful desserts.

Ingredients:

-2 eggs

-500g(17.73 oz) of flour

-5 tablespoons of sugar

-2 large oranges

– Anise to mix

-seed oil for frying

-vanilla icing sugar

Preparation:

The dough for frying is prepared 1 hour in advance.

1) Place the flour, sugar and eggs in the mixer bowl.

2) Splice the 2 oranges, filter the sauce and put it in the blender and blend everything. If the dough is a little hard, add a little anise (the liqueur).

3) Let the dough rest for 1 hour, you will see that it swells slightly even if there is no yeast.

4) On a work table, roll out a very thin sheet of dough, the thinner it is, the crunchier our crostoli will be. With a pasta cutter, make random cuts, even irregular ones, because at Carnival every joke counts!

5) In a wok, put a lot of oil to heat on high heat. When the oil is hot, start inserting your sfrapole. Turn them on both sides and cook them as you like, burnt or not, they are so quick to cook.

6) Take them with oil tongs and let them drip on top and then place them in a tray with absorbent paper. Sprinkle vanilla icing sugar on both sides.
