Lasagna with chicken breast
I don’t know about you, but at my house when we buy roast chicken everyone only wants the thighs :-), so every time I have to figure out how to use this leftover chicken breast. Tonight I made this fantastic lasagna, which to be honest I was a little skeptical about, but it was a huge success.
I started by removing the bones and skin from the 2 chicken breasts, then cut them into small pieces. Cut an onion into small pieces and fry it in a pan. When the onion has browned, add the pieces of chicken breast, salt, pepper and tomato puree. Mix everything and cook everything for a few minutes to mix everything together. Turn off the heat and make the béchamel sauce.
Now it’s time to make the béchamel, so let’s put a pan with butter and flour on the heat, see my béchamel recipe, mix until the butter and flour are mixed. Add the hot milk and mix, after a few minutes the béchamel is ready.
Let’s start making the lasagna with chicken breast. Place some tomato puree on the bottom of a baking tray, place the lasagna sheet, then our sauce with the pieces of chicken breast, then the béchamel sauce and finally cover with parmesan.
Let’s start putting the lasagna sheet on top again, then we start again by adding the chicken breast sauce, the béchamel and finish with the parmesan.
Cover the baking tray with aluminum foil and bake at medium-high temperature and cook for 30 minutes. Remove the foil and cook for another 10 minutes. If you want a nice crust on top, operate the upper grill of the oven for 2 minutes. Before serving, leave it out of the oven for 5 minutes.
