Baked goat kid

Kid goat is much more delicate in comparison to the flavor of lamb. The preparation and cooking procedure does not vary. First of all, wash the goat kid well, that is, be very careful to remove the residue of the skin which may look like human hair, then put it in the marinade (I add salt, vinegar, pepper and bay leaves) and then in the fridge the day before cooking. When cooking, rinse all the marinade and season with salt, rosemary and chopped garlic. Add a drizzle of extra virgin olive oil and then bake over medium heat, covering the pan with foil.

After an hour in the oven, turn the koad kid and put it back in the oven, always with the foil on top. After another hour, remove the foil and turn the meat over, add a glass of white wine and put it back in the oven for at least half an hour. A few minutes before serving, prepare the puree. Serve the goat kid next to the puree and serve hot!
