Stuffed courgettes

Wash the 4 courgettes and then cut them in half, hollow out with a kitchen tool or simply with a knife, remove the middle of the courgettes, put them in a food processor and blend them.

Add 2 tablespoons of breadcrumbs and one egg to the food processor then blend. Also add some parmesan. I had some freshly made ragù in the fridge yesterday and I added it, but you can easily make at least some.

Place the courgettes in a baking dish greased with butter and then fill the courgettes with the filling obtained, cover everything with a little grated parmesan. Place in the oven for about 30 minutes at a medium-high temperature. Add a little wine and cook for another 10 minutes.
