An easy and tasty way to get children to eat fish and make African perch cutlet-style.
Rinse the African perch fillets and then pat dry with kitchen paper. Place the breadcrumbs in a deep plate and in another plate place 2 eggs, a little milk, salt and pepper and then beat. Begin breading the African perch by dipping the fillets first in the beaten eggs and then in the breadcrumbs.

Once all the fillets have been breaded, fry them in a pan with a drizzle of extra virgin olive oil. When they are cooked on one side, turn the fillets to the other side, add half a glass of wine and then cook for another 10 minutes over low heat. Season with a little lemon juice.
