Roselline con speck e mozzarella di bufala
The roses made with homemade pasta are of a unique delicacy, so first make the dough of the roses with 400g of flour, a glass of warm water with a teaspoon of sugar and 7g of fresh butter. Knead everything well until you obtain a homogeneous dough, then leave it in a warm place to rise with a cloth on top. Grease a baking pan with extra virgin olive oil.
Using a rolling pin, roll out a sheet of dough. Sprinkle some tomato puree onto the pastry. Take the buffalo mozzarella from the fridge and choose 4 pieces to use for the roses.
Cut the buffalo mozzarella into small pieces, then distribute it evenly over the dough, add some pieces of speck. At this point roll up the pastry.
Once you have a roll, cut out pieces as wide as the height of the cake pan. Turn the cut out logs and place them in the cake tin and then cover it and leave to rest for an hour with a cloth on top. After an hour you will notice that the roses have risen a little more. Spread with an egg yolk and bake on medium high heat for 40 minutes.
