Orecchiette with speck and cream
In this recipe I tried to combine the speck from the mountains with the orecchiette from the Salento sea. Orecchiette are made with fresh durum wheat semolina pasta, very quick to cook (5-6 minutes) and easy to digest.The result… a delight for the palate and simple to cook. Start by frying a finely chopped onion, after 2 minutes add the speck cubes, mix and leave to cook for a few minutes and then add the cooking cream. Meanwhile, boil the water for the orecchiette.
Add a ladle of pasta cooking water and mix. When the water in the pan boils, put some coarse iodized salt in it and then add the orecchiette and cook them. Once cooked, drain them with a colander and then mix with the ready-made sauce.
Add some grated parmesan on top.
