The best way to prepare red mullet for me is in a pan. They can also be grilled but for me they are a little too dry. We begin by cleaning the mullet by removing the entrails and scaam, rinsing them and then dabbing them with a soft paper towel to absorb the water and placing them on a plate. In another dish, add breadcrumbs, semolina, chopped garlic and parsley and mix everything. Cover all the mullets with a drizzle of extra virgin olive oil.

Bread the mullets by turning them over all the milks on the plate with the breading mix. Put a drizzle of oil in a large pan and then add the mullets. Cook them on a pan, then turn them over, spread a silo of extra virgin olive oil and finish cooking. Excellent to serve with fresh white or rose wine.
