Eggplant made like pizza in the fryer
The easiest and quickest way to cook foods that could be fried or grilled is: cook them in the fryer, you don’t have to heat the oven, you don’t have to use a lot of oil… and it’s very tasty. Today I chose to make the eggplant in the fryer. I took a large eggplant, cut it into rounds and then put some salt on the slices and left them for 10 minutes; in this way the eggplant draw out a liquid which without this makes them tastier, after I dabbed them with soft kitchen paper and sprinkled just a little extra virgin olive oil on top after put them in the fryer.
Cook for 10 minutes at 200°C (392°F). Meanwhile, take some mozzarella and cut it into slices (I had small mozzarella) and then prepare some tomato puree in a bowl. Once 10 minutes have passed, turn the eggplant to the other side and cook for another 6 minutes at 200°C(392°F). Once this time has passed, take gloves out of the fryer and add a little tomato puree, mozzarella and sprinkle some dried oregano on top of the eggplant slices. Place back in the fryer and cook for another 6 minutes at 180°C(356°F). There you have it…very tasty!!
