Octopus and potatoes salad

An excellent salad to eat in summer: octopus and potato salad. It takes a little time to cook the pate and the octopus, but the final result is super surprising. Start putting it in a large pot with water and a few bay leaves, let it cook for 30 minutes. In a large pan, boil the potatoes, also for 30 minutes because if they are overcooked they will crumble. Once the cooking time has passed, drain the octopus and let it cool to room temperature. Also drain the potatoes and let them cool. Once everything has cooled, cut the octopus into pieces and cut the potatoes into small pieces. Put everything in a bowl then add extra virgin olive oil, chopped parsley, salt and pepper. Mix everything gently and serve. A child’s game!
