Cavatelli di patate homemade (potato cavatelli) with tomato
Cavatelli di patate with tomato is a genuine, organic and very easy to make pasta dish.
Start by washing the cherry tomatoes, I chose this type of cherry tomatoes because they are very tasty. After washing them, cut each cherry tomato with a pointed knife and make a light cut in each cherry tomato, then put them in a pan with water and let them boil for about 6/8 minutes and no more because they fall apart afterwards, then immerse them in a bowl with water and ice all the cherry tomatoes and leave them for a few minutes.
Remove the skin of the cherry tomatoes and place the peeled cherry tomatoes in a bowl. In a pan, put a drizzle of oil and 2 cloves of unpeeled garlic, cook for 2 minutes and then add all the cherry tomatoes and cook for a few minutes. Separately, cut the basil, thyme and chilli pepper into small pieces and put the cherry tomatoes on top to give them a little flavour.
Cook everything with the lid on for a few minutes, stirring occasionally. Cook your potato cavatelli aside and when they are cooked put them on top of our sauce with the cherry tomatoes. Mix everything, plate and serve hot and put grated parmesan and a few basil leaves on top.
