Stuffed courgettes with ragù
For me it’s a quick and easy way to cook courgettes, all you need is a little ragù, grated bread, 1 egg, salt, pepper and that’s it. First of all, wash the courgettes, cut them in half and then with the help of a spoon, scoop out and remove the pulp and set it aside. Place the courgette pulp, 1 egg, a glass of pagratatto, parmesan, salt and pepper in a blender. Action everything for a few seconds, until everything has blended.
Fill each half courgette with the filling obtained and place, add a sprinkling of parmesan on top, them in a baking pan. Place them in the oven at medium high temperature and cook for 40 minutes. Once cooked, the stuffed courgettes will be a fantastic side dish and why not… a light meal!
