Steamed Chicory
Chicory is a low-calorie plant and it’s perfect to use in a diet, also due to the presence of fibers which increase the feeling of satiety, it is a food rich in fibre, vitamins, mineral salts and antioxidant and anti-inflammatory substances. Today I cooked it in the simplest and fastest way: by steaming. First of all, cut off the base of the leaves and then wash the plant well, cut it into pieces so you can distribute it in your steamer. Cook it for about 40 minutes, drain and then cut it into small pieces and place in a serving bowl. Season the chicory with extra virgin olive oil, salt, pepper and balsamic vinegar and then mix everything.
