Aubergines style pizzaiolla with buffalo mozzarella
Wash and cut the aubergines into slices, sprinkle some salt on them and let them rest for 10 minutes and then rinse them. In a large pan (like the one used to make piadina) put a drizzle of oil and then place the aubergine slices and cook them on both sides of the milk. In a baking pan, place the baking paper and then distribute the cooked aubergine slices on top. Cut the buffalo mozzarella into slices.
Place a little tomato puree on the aubergine slices, then sprinkle with oregano and finally place the buffalo mozzarella slices. Bake in the oven for 15 minutes at medium temperature.
