Cheese cake of cookies “Pan di stelle”
The Mulino Bianco Pan di Stelle biscuits together with cherry jam, give a result I could only say: excellent!
Ingredients:
-200g(7,05 oz) of Mulino Bianco Pan di Stelle biscuits
-250g(8,81 oz) of ricotta
-250g(8,81 oz) of mascarpone
-100g(3,52 oz) of butter at room temperature
-100g(3,52 oz) of icing sugar
-3 eggs
-2 tablespoons of flour
-cherry jam
Let’s start preparing the base by placing all the pan di stelle biscuits in the blender, blend until all the biscuits are crumbled, then add the soft butter and blend everything together. Place the mixture in a pan previously lined with butter and flour and create the base of the cheese cake by pressing the mixture well onto the bottom of the pan.
Now separate the whites from the yellows of the eggs. Whip the whites separately with a pinch of salt. First whisk the egg yolks with the icing sugar and then add the mascarpone, ricotta and flour. After obtaining a homogeneous mixture, add the white of the whipped eggs and mix delicately. Place everything on top of the layer with the biscuits and bake for 30 minutes at 175°C (347°F).
Let it cool and then spread your cherry jam on top, but if you have another jam available… no problem it will still be a success! You will amaze everyone with this dessert!!
