Courgette Pesto
Courgette pesto is versatile, vegetal and good. It can be used as an aperitif, spread on bread or used as a condiment. Basically it is made like basil pesto.
Place the pine nut seeds in the mixer then add extra virgin olive oil and then a few basil leaves, chop everything for a few seconds. Grate a lot of pecorino romano cheese and add it to the pesto and then chop everything for a few seconds.
Grate 2 courgettes and add to the pesto. Also add a little parmesan, salt and pepper. Blend everything and your courgette pesto is ready.
