Radicchio con speck gorgonzola e noci al forno (radicchio baked with gorgonzola speck and walnuts)

Wash the radicchio and then remove the leaves, blanch them for a few seconds until they soften a little, then place the radicchio leaves in ice water. Start filling each radicchio leaf with speck, gorgonzolla and chopped walnuts. Roll the leaf on itself starting from the widest part of the leaf. Add your radicchio rolls to a buttered baking tray and sprinkle some parmesan on top. Cook for 30 minutes over medium-high heat.
